depends on the receiver. most modern receivers and integrated amps follow the 120ohm standard most of the time but that depends of course on manufacturer. it's usually separate preamps with much lower output impedance at the headphone outs naturally. only way to get the lowest output impedance possible is hook the headphone via speaker outputs cause speaker outs even on not so well design amps is lower then 8ohms at the outputs.

the power output depends on the resistors between the power amp section and headphone output used on how the manufacturer wants to limit it and feels what's right depending on their goals.

it all depends overall on how well the receiver is made too. i always stuck with stereo and older 70's and 80's amps and receivers but when i picked up the current onkyo tx-sr602 it surprised me especially it being a 7.1 surround receiver. i was expecting it to sound ok despite the features i read about it being something i was interesting in but it ended up performing better then i thought.

it sounds great with my df's as well which is 600ohm 88db@1v which is considered very low in sensitivity which was surprise since i only liked my df's off speaker outs of my power amps.

It might be immune to some types of noise, but the fiber optics channel can be harsh. Specially consumer grade multi-mode fiber optics which can suffer from modal dispersion. I wouldn't worry too much about it for a few feet though.

harsh? like it sounding too sharp or something? or just making the incoming signal overall harsh?

i use some cheap GE(general electronic) dual-strand plastic fiber optic cable. got it cause was curious about digital and found it to do well...well for a cable.

but one thing i do notice is sound gain is boosted a bit when you use digital inputs. for some reason everything is bit louder going from analog to digital. it's probably just cause the dac inside the receiver is made with different gain output or something. i just know i'm not the only one who didn't noticed this when i read up trying to find some answers.

Didn't meant harsh in the context of sound quality. More like a harsh environment for signal integrity.

TOSLINK I think typically uses multimode fiber which suffers from internal light reflections which effectively filter the light signal and restrict it's bandwidth and reach. Futhermore, most audio equipment seems to use LEDs which might compound on the dispersion problems. Now SONET stuff typically uses lasers and single-mode fiber, but we are talking $ there.

Like you said, proly different analog/digital interfaces which might yield different results.

Yep, optical isn't the panacea (though it would be great if it was). Keep your length below 6 feet and you're probably alright. I assume it would be less likely to carry ground loops and the like.
If you're concerned with quality I'd recommend this as they know their stuff: http://www.bluejeanscable.com/store/digital-audio/index.htm
I have a 15-footer from when I ran optical out of my laptop to the receiver and it has worked flawlessly.
