I personally really dislike s-v chicken breast as well. usually it's too briny and bland because it comes pre-brined or whatever. mushy texture. big blah.
but duck breast on the other hand... mmm.

however, you cannot get perfect medium rare uniformly 54-56 degrees celsius in the dutch oven and be fork tender... as easily!
but yes, sous-vide is very dependent on many factors just as traditional cooking. most of the time, I can achieve just as good results without it. it's mostly convenience if you are used to factoring in the differences from traditional ways.

anyway I just get way too fired up about cooking, sorry. let's stick to the meet!

I really liked n3rdling's Aristaeus with the SR009. A very good match. The bass actually becomes a bit thick, maybe too much so. He also brought he SR-Omegas which remain one of my favorites from STAX. I'm just not too enamored with the SR-009 still. I think the Aristaeus is probably my favorite HeadAmp. I wish Justin would make more of these things because they are a better match with the SR-009 than the BHSE.

i do still build it. theres about 10 unsold units right now. i just need to get the PCBs assembled but its not a priority with the BHSEs and GS-X mk2s to build. Nobody buys it though, maybe the occasional person who ends up with a used HE-90

How many Orpheuses (Orphii?) are there out in the wild?

Not sure if I like stuffing one hole or both holes. Tending toward one hole since both holes seems kinda ghey ~Purrin

How does the Electra fair vs the Aristaeus ?

Aristaeus is really thick and syrupy in the bass. Sort of like the Leben, but much much better done since this bass behavior doesn't negatively affect the rest of the band - the mids and the treble. The WES has a similar quality in the bass, but not quite to that extent.  Compared to the Aristaeus, the WES was kind of dead sounding and less open. Less interesting and less lively than Aristaeus. Aristraeus was probably the most black sounding amp there.

I'd give the nod to the Electra for better micro-detail, micro-dynamics, liveliness. and openness. However as equipped with the 6L6 tubes, the SR009 sounded too midrangy. The EL34 would have fared better with the SR009. I had a set of EL34s lying around, but the volume pot failed. The Electra experienced a severe tracking error between left and right channels during the meet.
