Shrimp Gumbo.

Tough parts / hints:

* Browning the roux (need good technique for temperature control - don't want to smoke it)
* Use lots of butter.
* Gotta let it simmer a while for the flavors of the ingredients to blend.
* Clam juice, lobster shells, shrimp shells = crucial for flavor.
* Put shrimp in just before eating.
* I omit the tomatoes.

Fine, I'll post my personal variation on portobello tellagio sliders soon, too. I've been futzing with spicing and realized I've been missing coriander.
